In this episode I go over the second non-artistic "ordinary naturalistic" mechanism known as the Gas Diffusion/Evaporation mechanism. In particular, I evaluate both Paul Vignon's "Vapograph Hypothesis" and the Ray Roger's "Maillard Reaction Hypothesis".
