Vegan recipe
Set oven to 350° 30 minute cooking time
Stuffed zucchini
Serving size 2
Two large green zucchini, get a medium size tablespoon or teaspoon, split zucchini in. Half
Use your spoon to hollow out the seeds set them aside for later
In a medium size sauté pan add diced onion allow to cook for 45 seconds then add minced garlic and your zucchini insides season well as you desire
Now add spinach, And a 2 to 3 tablespoons of sweet pea
No 1/3 of a cup of quinoa pre-cooked
Fold in with your vegetables, place back in the zucchini
Don’t forget to season your zucchini as well
You may add goat cheese or vegan spray cheese in Dollops if Desired
Simple friendly Diabetic drink
Get pre-bought/or fresh for strawberry
Lime/or peach tea
Fresh lemon grass and mint
2 tablespoons of agave nectar
A pinch of sea salt or black salt
Steep your tea chill with ice add sliced fresh strawberries a squeeze a fresh lemon juice slice your limes add them at agave while still warm and a pinch of salt chill and you have a healthy refreshing diabetic Friendly beverage

In season sliced heirloom, arugula/spring mix, fried eggplant, sliced red onions, raspberry, Cucumber salad thinly sliced, citrus Peach
