Breanna launched a microbakery, offering weekly sourdough bread to the community. She makes 20 loaves at a time, y'all! That's 40 pounds of kneading, and it takes her 36 hours from start to finish. What a process, a science, and most importantly a labor of love.
In this episode we dive deep into the nuance it is to make a loaf of sourdough bread. It is simply flour, water, and salt. And yet! It is also a whole lot of feeding a starter, and measuring, and kneading, and waiting, and baking, and waiting. Anyone heard of crumb mapping?

We discuss the hard and easy, as well as the story that led to selecting their name: Haven Bread Co. We chat about why they use organic ingredients, as well as the sweet offerings they sell that incorporate the sourdough discard.
