She taught me that protein must be appropriately portioned. I eat keto as much as I can and on keto, eating too much protein will throw you into gluconeogenesis where your body will convert that to carbohydrates! What!? Yes....in fact, ruining the entire point of keto. So, my friends, be sure to watch your protein intake. As Celeste covers in our conversation, we live in such a protein-macho society where we think protein represents "strength," and "muscle," where the reality is ALL plants do that. ALL plants are muscle and provide rich nutrients, antioxidants, and so much more. I can't wait for you to journey deeper into incorporating more plants into your life.
