Recipe:
3 cups warm water
1/2 cup brown sugar
1.5 tbsp yeast
(mix together in bowl of mixer and let yeast proof for 10 minutes)
2 cups mixed roughly chopped dried fruits such as raisins, dried apricots, prunes, cherries, candied ginger
3/4 cup oats
(add to liquid and allow to sit for about 20 minutes to plump)
1 egg
2 tbsp melted butter
1 tsp vanilla extract
2 tsps cinnamon
1/2 tsp each nutmeg and ground cloves
3 1/2 cups white flour
2 1/2 cups whole wheat flour
1 tsp salt
Use dough hook and mix for about 10 minutes
Transfer dough to 3 small loaf pans or 2 large loaf pans or shape freely into one giant loaf!
Allow to double in size
Bake at 350 for 35 minutes.
