Katie Walter is a yoga instructor (check out our previous podcast episode!) and has consistently followed a vegan diet for over 5 years, including during her last couple of years at Miami University where she competed in track and field as a thrower. Although I am not a big proponent of the vegan diet, or most diets for that matter, I 100% believe it can be done in a healthy way with the right knowledge, effort, and time commitment.
