Welcome back, Boo Crew! In this week’s episode Bree is taking us to a place many of us have heard of before, Sleepy Hollow. Do you know the true story of Sleepy Hollow? There were definitely some facts she shared that I didn’t know. From Disney to Johnny Depp, we talk about it all! For our dish, I re-made the Tomato Soup from episode one. I tweaked the recipe some, adding in purple onion and heavy cream. I’ve got to say, I think it definitely improved! I also made some Cheesy Cauliflower Breadsticks for dipping. Tomato Soup
Desired amount of tomatoes. I used some big, beefy boys as well as some Romas and some grape. Cut the tomatoes in half, throw them on a baking sheet. Halve an onion, throw that on the sheet. Halve a bell pepper and take the seeds and stem out, then throw that in there. Coat lightly with olive oil and desired amount of seasonings. I use thyme, basil, rosemary, salt and pepper. Rub all that into the veggies. Next, grab a couple heads of garlic and chop the tops off. Wrap them in some foil and pour some olive oil on the top. Add salt and pepper to the tops of them and then fold the foil over top. If you have room, you can add these amongst your other veggies on the sheet or just pop them in the oven solo on the rack. Bake at 400 degrees for at least an hour. Once done, add everything to a blender, food processor, or if you only have an immersion hand blender, add it all to a big stock pot. Blend until desired consistency is achieved. Add a carton (4C) of veggie or chicken stock, desired amount of heavy cream, I used a little less than a pint, a few fresh basil leaves and blend again. You may also add any more salt, pepper, or any other amount of whatever seasonings you’d like a stronger flavor of. Pop it in a bowl and serve with a drizzle of heavy cream, olive oil, some shredded Parmesan cheese and a fresh little basil leaf.
