Welcome back, Boo Crew! In our 12th episode, we’re going local again with the story of the Silver Creek Dogmen! This may be a place that Bree and I decide to take a trip to one of these days, so we can try and spot a new furry friend! However, we don’t recommend trying to pet one. As for our dinner, I made some GF Sweet Potato Gnocchi and Tri-color Roasted Carrots in the air fryer. This was my first time ever making gnocchi, and boy did it show. But it did taste pretty good! As for the carrots, SURPRISE!, I winged it. I cut up 3 large carrots into decent sized chunks. Then I threw them into a mixing bowl with some EVOO, garlic & onion powder, salt & pepper, 1/8 teaspoon of each of the following; curry powder, turmeric and coriander powder. I tossed all of that together and mixed, then dumped it into my air fryer on 400 degrees for 15 minutes. However, I should’ve done 20 minutes as some of the thicker chunks still had a little crunch to them inside. So you may need to adjust the time for the size you cut. Mine were cut approximately in 1” chunks.
