Welcome back, Boo Crew! This week, Bree is taking us to Germany for her story on the Eltz Castle. This tale gives us ALL the Joan of Arc vibes, with ghosties thrown in! As for our dish, I made some air fried Zucchini Fries and Eggplant chips! A simple dredge method makes these easy to throw together for a healthier lunch, even if it is a little messy. Zucchini Fries/Eggplant Chips

I used 3 small/medium zuccs, and 1 medium sized eggplant. Cut into bite size fries/chips and do your dredge method. Seasoned flour, then your egg/flax egg and finally some seasoned bread crumbs. Let sit for a few minutes and do another egg/breadcrumb dip if you want/need more crisp. Throw it in your air fryer on the default temp setting for 10-12 minutes and voila! Serve with your fav marinara sauce!
