Easy Peach Buckle
Ingredients:
2 packages (16 ounces each) frozen peach slices, thawed or 5 cups fresh peach slices
1/4 cup sugar
¾ cups all-purpose flour
½ cup packed brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon baking soda
¼ teaspoon salt
1 1/3 cups buttermilk
6 tablespoons canola oil
1 teaspoon vanilla
Cooking Directions:
Coat inside of 4 1/2 quart Crock-Pot with non-stick cooking spray.
Toss peaches with sugar; set aside. Combine flour, brown sugar, baking powder, cinnamon, baking soda and salt in medium bowl.
Combine buttermilk, oil and vanilla in small bowl; mix well.
Stir buttermilk mixture into flour mixture just until blended.
Spread batter evenly in Crock-Pot. Arrange peaches on batter.
Cover; cook on high 2 ½ hours, or until buckle springs back when touched.
Serve warm.
Makes 12 servings.
Kitchen Tips:
No All-Purpose Flour?
* For thickening gravy or sauce, you can substitute 1 tablespoon cornstarch, rice starch or arrowroot for 2 tablespoons flour or 2 tablespoons instant mashed potatoes, cornmeal or quick-cooking tapioca.
* If you use whole grain flour in baked goods, be careful not to overload them with it or the food may be heavy. For each cup flour, use 1/2 to 2/3 cup whole-wheat flour plus the remainder of white flour called for in
the recipe or 1/2 cup rye or buckwheat flour or 1/4 cup soy flour.
No Unsweetened Chocolate?
(For 1 Square - 1 ounce piece solid chocolate)
* Use 3 tablespoons unsweetened cocoa plus 1 tablespoon shortening.
