Cut your teeth means to gain practice and experience at something. Often you cut your teeth on easy things then move on to complicated stuff. When a baby begins to get their first teeth, the teeth have to break through the gums. When that happens, we say the baby is cutting teeth. That is probably where the expression first came from.
