My guest this week is Andres Maldonado Fuertes the owner of Brick and Butter; Nona Street Pizza; Eighty Twenty and Nona Street Bistro

I discussed with Andres on how he started Nona Street Bistro and then started Nona Street Pizza, Eighty-Twenty and Brick and Butter.

We discussed where his love for cooking came from and discussed the evolution of his concepts.  We also spoke about how he balances life, work and family.  Andres discussed the importance of creating processes.  We also spoke about a new venture that Andres is looking to start to help others start their own culinary concepts.  

We also spoke about the good and bad about running a food truck concept and the difference between owning a small restaurant location.
