Hey everyone! Here's a rundown of the recipe from today's show!!
Turkey Meatballs and Lemon Rice Recipe
Rice Ingredients:
· Rice (I use 1 cup, you can use more or less if you want)
· 1 tsp lemon juice
· 1 tbsp parsley
· ¼ cup grated Parmesan cheese, once finished!
· Cook rice per package instructions if necessary!
Instructions for Rice:
1 Cook how the packaging says if you’re unsure, that’s what I do!
2 I used brown rice for mine, which requires 45-60 minutes to cook (using a microwave can make it faster!)
3 I like to make sure the rice is cooked enough by taste testing a piece or two once near the end of cooking.
4 Start making the meatballs after the rice is done!
Meatball Ingredients:
· lb of ground turkey
· 2 tbsp milk
· ¼ cup breadcrumbs
· ½ tsp lemon juice
· 2 tbsp parsley
· ½ tsp garlic, minced
· Pinch of salt and a few dashes of black pepper
· Add few sprinkles of onion powder and garlic powder for extra flavor!
Instructions for Meatballs:
1 Mix all meatball ingredients together in a large bowl, use a wooden spoon or your hands (WASH THEM BEFORE AND AFTER!!) to thoroughly mix meatball mixture.
2 Form ~1 inch diameter balls and place them on a plate to cook later once they’re all formed.
3 Form all meatballs and heat up medium to large sized skillet with 1 tbsp of olive oil on medium heat *CAUTION! Oil gets very hot and messy!*
4 Add meatballs to skillet, making them golden brown on all sides, they don’t need to be thoroughly cooked, that’ll happen when they’re in the rice!
5 After browned, line a plate with a paper towel or two, put the meatballs on it and dab the grease off lightly.
6 Take the rice from the first part and put it in the meatball pan, stirring for about 1-2 minutes
7 Add ½ tsp of garlic and pinch of salt, cooking for 1 minute, then stir in ¾ cup chicken broth, 2 tsp lemon juice, and bring the heat down to simmer.
8 Add the meatballs back into the rice, then turn to low, and cook for about 10-15 minutes or until the rice is tender and meatballs are thoroughly cooked!
9 Turn off burner, remove from heat, sprinkle ¼ cup grated Parmesan cheese and a few shakes of parsley on top, cover and let it sit for 5 minutes before serving!
