Emani Parsons has always been interested in nutrition, health, and wellness. Emani studied Health Science at Lincoln University and received a Master's in Human Nutrition from Columbia University Institute of Human Nutrition. Community nutrition, nutrition education, along with cooking and baking are some of Emani's passions. She currently works as a Middle School Health and Wellness Teacher while operating her nutrition and baking business, Vegan Mani, LLC. Emani has been vegan for over 4 years and she aims to encourage, empower, and educate people on the importance of healthy eating, and living a healthy lifestyle. She joins us to talk about the benefits of plant-based diet.
