Description

Brown the pork butt in bacon fat. Cover and cook in a preheated oven at 350 degrees for four hours. Add vegetables two hours later. Cook another two hours; test with a meat thermometer for 170 degrees. It's not overdone or well done. The result is very juicy, tender and dark pink in the middle. Serve with potatoes and your favorite vegetables. This is comfort food meant for weekends with friends and family members who can linger and spend time watching sports in front of the TV like the Winter Olympics. Expect them to stay awhile.
