There are some things in nature that we cannot consume in raw form, but that we can consume in processed form - cooked, for example. I'm thinking of certain vegetables or beans or similar. Other things from nature we can put directly into our mouths and eat - some fruits or salads. Why is that? Why can't everything that is good for us and that we can tolerate be consumed directly and everything else not? One can also see the situation differently: Thanks to a certain investment of time and energy, the range of food that we can tolerate increases enormously. Yes, it takes more time and energy and sometimes also work, but in the end something is available that we didn't have before. In our time, where everything has to happen quickly or can be achieved immediately through finance, this principle is unpopular. But it still applies: in order to achieve certain things, a more or less large investment is necessary here and there. But this also makes what has been achieved all the more valuable.
