Where I come from there is not such a thing called Mac & Cheese. If you want pasta, you make a sauce with tomatoes as a base and Bon Appetit. There are variations of course where you do a cream or an oil sauce, but cheese you only use to top things off before you serve the dish. So, for the longest time, I could not embrace the idea of eating my pasta with only cheese… until recently. A friend of mine gave me a family recipes of Mac & Cheese and let me tell you, I am a believer. I like it so much that I’m in the process of becoming a Mac & Cheese snob, because what’s coming out of my kitchen is that good…I just made some tonight!
