Penicillin

2 oz Scotch Whisky
3/4 oz Fresh Lemon Juice
3/4 oz Honey Ginger Syrup*
Float 1/4 oz peated Islay Whisky

Shake all ingredients but the Islay whisky with ice, strain into an ice filled rocks glass, float the Islay whisky on top, garnish with a piece of Candied Ginger

Repeat Prescription 

2 oz Irish Whiskey 
3/4 oz Fresh Lemon Juice
1 oz Ginger Liqueur
1 Dash of Orange Bitters 
Float 1/4 oz Peated Islay Whisky

Shake all ingredients but the Islay whisky with ice, strain into an ice filled rocks glass, float the Islay whisky on top, garnish with a piece of Candied Ginger

* Honey Ginger Syrup
You can find lots of different recipes online but here's mine (also works with Agave Syrup instead of Honey if preferred):
250 ml Honey
250 ml Water 
180g Unpeeled Fresh Ginger
A pinch of Salt
Blend Honey, Ginger and Water into a puree. 
Add some cracked black or cayenne pepper** into a dry pain, heat until fragrant, add the pureed honey ginger mix and boil, simmering for 10 minutes. Put aside to cool for a further 10 minutes. Fine strain into a glass bottle, let stand until room temperature and then seal and refrigerate. 

**Without getting into the chemistry, fresh ginger soon loses its spiciness once processed, but black or cayenne pepper doesn't, so the inclusion of a little black/cayenne pepper in the syrup compensates for this.
