Some people serve waffles, but Bailey Erickson serves up inspiration, one golden, caramelized bite at a time! The founder and owner of Wafel-Bitte, Bailey turned a simple pandemic project into a thriving business that brings the authentic taste of Belgian Liege waffles to homes and communities across Alabama.
A retired U.S. Air Force veteran and former federal law enforcement officer with 32 years of service, Bailey is no stranger to dedication and hard work. Since starting Wafel-Bitte in 2020 with her daughter Alexis, she has grown the business from a cottage food venture into a full-scale food manufacturer, offering both original and gluten-free waffle mixes in stores and online.
Bailey’s impact extends far beyond her business. She is deeply involved in her community, volunteering with organizations like the Rotary Club of Madison, Women’s Economic Development Council, and Madison Visionary Partners. Her projects, like “Save Our Monarch” butterfly conservation and the innovative “Walk Historic Madison” app, showcase her creativity and commitment to making Madison a better place to live.
Her work has earned her recognition as one of WHNT’s Most Remarkable Women of 2022 and accolades for Wafel-Bitte, including the Catalyst Center’s Emerging Entrepreneur of the Year (2022) and Alabama’s Small Business Success Story for Disaster Preparedness and Resilience (2024).
When she’s not growing her business or leading community initiatives, Bailey loves spending time with her children—Christian, an electrical engineer, and Alexis, currently serving in the U.S. Air Force in Germany.
Join us in this episode of SheBoss as we dive into Bailey’s journey, from perfecting caramelized pearl sugar waffles to creating a legacy of service and entrepreneurship.
