Appleton 8 year rum - With a Twist!!
Coconut Mojitos for 2
In a glass add 8 mint leaves & 2 teaspoons of demerara Sugar then Muddle add crushed ice to the glass. Then add:
1.5 oz. Coconut Infused Appleton 8yr Rum
1/2 oz Lime Juice
2 lime wheels and fill with sparkling water or club soda.
Garnish with a lime wedge!
Coconut Infusion:
16 oz. of Appleton 8yr Rum
5 oz. melted Extra Virgin Unrefined Coconut Oil { The Mustard Seed - Organic & Natural Food Market and Cafe }
add together in a glass jar with a lid. Let sit at room temperature for 3 hours. Then mixture into the freezer for 30 minutes. Once the Coconut oil is solid again poke holes in it to drain out the rum. Filter through a fine mesh strainer and follow up filtering it though some cheese cloth. Put it into a bottle with a top and make your favorite Coconut Rum Cocktails! Cheers! 🥥🍹
