Since 2016, Valdivia has bought a second truck, a brand-new van dedicated to deliveries and the crown jewel: The Lomo Truck HQ, his first brick-and-mortar location. And he has eyes on expanding and franchising. The Lomo Truck HQ, on McBride Avenue in Woodland Park, opened the last week of December, and business is booming. The takeout-only spot follows the same color scheme as the trucks — white and red, to symbolize the Peruvian flag — and on one wall, a mural of the corner of Madison and Getty avenues as a tribute to where it all started. Valdivia's father and his brother, Victor Ortega, are now both partners. His father helped provide the capital for the expansion, and Valdivia described Ortega as the "backbone" of the operation. It isn't just Peruvians who stop by. People from a multitude of backgrounds come to fill up on lomo saltado, chicken and beef chaufa (Peruvian fried rice), and salchipapa (french fries with sliced hot dogs, drizzled with a ketchup and mayonnaise mix). "I can adapt to the Peruvian, to the non-Peruvian, to the businessman, to the street kid," Valdivia said. "Just come enjoy a good meal."
