- Any cut that grinds up

⁃ Trim the fat

⁃ Grind it

⁃ 60% venison 40% lean pork

⁃ Mix it, by hand or with mixer

⁃ Steve country meats for seasoning

⁃ Stuff into beef casings

⁃ Stuff it, link style.

⁃ Tie together, 6 links per string

⁃ Hang for about 2 weeks, blackish on the outside still a little red in the middle

⁃ Dry area. Wood stove basement would be best.

⁃ Freeze, vacuum seal.

⁃ Good for about a year in the freezer
