Dr. Michael Briscoe is the author of "The Meatless Menu Paradox? Environmental Theory and Plant-Based Fast-Food Options." He earned his Ph.D. in sociology from Utah State University with emphasis areas in environment and community and social inequality. His research focuses on relationships between society, the environment, and animals. Michael’s research is highly collaborative and often focuses on issues of sustainability and well-being. His research has been published in Environmental Sociology, Social Indicators Research, Energy Research and Social Science, and other journals. Michael is also interested in public sociology and has worked with different nonprofits to apply sociological research methods to answer questions about their organizational impact.

Juliana is a writer, professor, filmmaker, and performer. She formerly lived as a volunteer on an organic farm in Maine, out of a backpack in the wilderness of Utah’s La Sal Mountains, and worked for the Ecology Center. Her writing appears in The Breakwater Review, Irish Pages, Los Angeles Review of Books as well as being produced as independent films that she directs. Her web series, The University, was nominated by the International Academy of Web Television for Best Drama Writing and screened at survivor justice nonprofits across the country. A 2022-23 Emerging Writer Fellow at The Center for Fiction, she currently teaches writing at NYU.
