Here are the recipes I used for the Recipe of the Week. Feel free to try them out and let me know how they went!
- Ube-Coconut Muffins: https://theunlikelybaker.com/ube-muffins-recipe/. To make the ube jam that fills the muffins, see below.
- Ube Jam (Halaya) (adapted from https://keepingitrelle.com/easy-ube-halaya-recipe/): In a pot on medium heat, pour 3 cups of water and an entire packet (about 4 oz) of ube powder. Add 1 can (about 14 oz) of coconut milk to the pot. Stir together (keep stirring throughout so that it doesn't burn!). At this point, you can add some sweetener to taste, or leave it unsweetened. Keep stirring, and the mixture should boil eventually, which will release some steam and thicken the jam. Once the jam is at your desired consistency you can pour it into a jar, seal the jar, and flip upside down to preserve and cool. Once fully cooled you can store it in the fridge and use in other recipes!
