Eddi Walker is simply one of the most amazing people on the plant. She seems to be everywhere, doing everthing.
Whether it is coaching the Special Olympics, volunteering at track meets, marking and timing road races, giving blood or working as a full-time substitute teacher, Eddi seems to have more time in a day than the rest of us.
Eddi also doesn't like talking about herself. It took a near-death experience to get her to join the podcast. She nearly died last week because she bit into a bun she didn't know included sesame seed flower. Eddi wanted to share her story because changing ingredients is something that caught local restaurants off guard.
