Maxie Millian is the Head Chef of Sangsaka, and Merah Putih both based in Bali. He is one of many Indonesian who has decided to focus on researching and cooking Indonesian food. We discussed his background and journey coming up through the ranks in Dubai, and his experiences learning Indonesian food in the past few years.
