Chef Iwan Gunawan is one of the most respected Japanese Food Chef in Jakarta. He is the head chef of the newly opened Ipponzuri Gunawarman, serving both authentic and modern Japanese dishes, from the classic Otoro to Aburi Salmon Melted. He shared his adventure in Japan cooking traditional Kaiseki cuisine to modern Izakaya in various cities including Tokyo, Kamakura, Kurihama, and Yokohama.  

If you visit Japan, you will see how hard they try to preserve their traditional technique, recipes, and method of food preparation. On the other hand, most successful Japanese restaurants outside of Japan served a 'modern' style of Japanese food which is adapted to please the local palates. It is fun to tweak the classics, adding mayo, cheese, or sambal to the 'boring' salmon sashimi, but don't forget about the classics. By knowing the traditional and classical method, we will be able to explore the modern sight of things confidently.
