 ⚠️ SOY ⚠️ - One of the best sources of high quality plant based protein, and an amazing source of vitamins, minerals, and incredible isoflavones that have ben shown to significantly decrease risk of cancer and osteoporosis.  Also! Loads of research shows soybeans can also help lower cholesterol and reduce risk of obesity and type 2 diabetes.  One thing that may be an issue about soy (and other plant foods that have been shown to have many health benefits) is soy’s lectin content.  Lectins are referred to as ‘anti nutrients’ because they decrease absorption of nutrients and eating large amounts of certain lectins may damage the get wall over time.  No worries though, as long as our foods are cooked long enough and at high enough temperature, the lectin content is nearly completely eliminated.  Research shows that soy lectins are almost completely deactivated when they’re boiled for at least 10 minutes!   Fermenting has also been shown to be effective at reducing lectin content by 95%!
