Plant-based Protein Patties:
12 Servings (1 pattie)
INGREDIENTS:
- 1c garbanzo beans (chickpeas)
- 1c lentils
- 1c oats
- 2 beets
- 1c mushrooms
- 1c Shredded carrots
- 1 juice of lemon
- 2 Tbsp cumin
- 1 Tbsp turmeric
- 1 Tbsp paprika
- Salt and pepper to taste
- Other spices of your choosing
INSTRUCTIONS:
- Soak your beans overnight (or use canned for convenience)
- Sauté mushrooms and onions for flavor depth
- Pulse toasted oats in a food processor as a binder (gluten-free alternative to breadcrumbs!)
- Combine with grated beets and carrots
- Season with lemon juice, smoked paprika, cumin, and your favorite spices
- Form into patties and either sauté or bake
Pro Tip: Roll your lemons before juicing to release more juice!
