We chat about Simon's ambition as a rugby player, dining at Michelin restaurants at 2 years old and being one of the youngest Ski instructors in Wales at the time. From there he came over to Australia where he found Caveau, which later began his career as head chef and co-owner of both Night Parrot and Caveau in Wollongong.
