Anabel makes vegan tacos! She is then joined by her friend Amanda, a real life vegan, to talk sustainability, their best scams, and go-to easy meals. 

Roasted Squash Tacos

  1. cut up squash into cubes and dress with olive oil, 21 seasoning salute, salt + pepper
  2. put into oven at 400 for ~30 mins 
  3. cut onion and pepper into strips and sautee on high heat. cover with lid to steam and add salt, pepper, and olive oil to taste 
  4. add black beans to small saucepan on low-med heat and add chili lime seasoning, salt + pepper, and even lime to taste 
  5. cut avocado into cubes and mix with salt, pepper, and lime juice. mash into guac of your desired chunkiness
  6. heat flour tortillas and arrange your vegan tacos!!
