Description

Anabel makes vegan curry and has a sinus infection. Then she and Caroline talk about drugs, the universe, and painting elephants.

Vegan Vegetable Curry: 

  1. Boil pot of water, season with salt. 
  2. Chop potatoes into home fries sized pieces. Boil until fork tender, about 15 minutes 
  3. Chop yellow onion into strips. 
  4. Heat saucepan on med-high heat with 1-2 tbsp coconut oil. Throw onions in, let sweat for a few minutes. 
  5. Chop peppers into strips; mince garlic; slice mushrooms
  6. Add garlic to pan (DO NOT BURN) along with 4 tsp each of garam masala powder and curry powder. Add more coconut oil as needed.
  7. Add peppers and sliced mushrooms to pan
  8. Season with 1 tsp each of turmeric and cumin. Adjust seasoning to taste, add more if you want it extra flavorful! 
  9. Let veggies sauté in spices until cooked fully with some color. 
  10. Add approx 1/2 can coconut milk, stir all together. 
  11. Let reduce for ~10 mins, season with salt + pep
  12. Serve with brown rice and enjoy! Top with chopped cilantro to be extra fancy.
