In this episode, we will discuss how what we eat can profoundly affect our metabolism and health, down to the molecular and genetic levels. Specifically, we will explore how nutrition impacts us at the epigenetic level. Our guest, Dr. Carsten Carlberg, will shed light on this topic. Dr. Carlberg is the ERA Chair for Nutrigenomics at the Polish Academy of Sciences in Poland and a Professor of Biochemistry at UEF. His research has focused on vitamin D for over 30 years, studying its effects on changes in the epigenome.
