- 1 cup cooked quinoa
- 1 cup pomegranate seeds
- 1 cup diced cucumber
- 1/2 cup chopped fresh mint
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped almonds
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Host: Instructions:
1. In a large bowl, combine the cooked quinoa, pomegranate seeds, cucumber, mint, feta cheese, and chopped almonds.
2. In a small bowl, whisk together the olive oil and balsamic vinegar to create the dressing.
3. Drizzle the dressing over the salad and toss gently to combine.
