Description

It’s the Grand Opening of Maître d’ Diaries, Season Two, and we are kicking off the season with the man, the legend, the Brad Pitt of Cheese, John Winterman.

Long before the restaurant Ever in The Bear there was Charlie Trotter’s in Chicago, where a pre-Silver Fox John Winterman cut his fine dining teeth. John’s illustrious career path took him to San Francisco to work with great Gary Danko, New York to work with Daniel Boulud, and then to open Batard in Tribeca with Drew Nieporent and chef Markus Glocker, which was awarded 3 Stars by the New York Times and won the James Beard Award for Best New Restaurant 2014.

John hangs out in Brooklyn now where he is co-owner of the beloved Francie, Michelin-starred restaurant with chef Chris Cipollone.

Give a listen for a behind the scenes glimpse into what it was like to work in the dining rooms and run the door at some of the country’s fineest dining rooms, the gentle nature of developing a relationship with regular guests, the powerful impact FOH & BOH workers being on the other side of the table every once in a while, and how he feels about people filming in the restaurant without permission.
