Welcome to Episode 2 of Chop Chop. I am delighted to be joined by Pam Kelly, Head Chef of the Farmgate Cafe in the iconic English Market in Cork. I’ve had the pleasure of working with Pam in the past so I was thrilled to catch up.
The Farmgate is all about using the finest of local, seasonal produce serving traditional dishes in a contemporary way. This is a mission Pam aligns with greatly as she shares her childhood food memories, her love for supporting local and how she is more bacon and liver than fillet steak and foie gras. In 2024, Farmgate Cafe will celebrate 30 years in business of which Pam has been at the helm of the kitchen for the past 5 years.
In this episode we chat about:
Pam’s childhood growing up around food
The joy in simple food
Funny kitchen stories
The importance of communication as a chef and leader
Listeners kitchen dilemmas which we can all relate to
