Ingredients

Instructions

  1. Preheat the oven to 350 degrees.  Prepare an 8x8 squarepan by spraying it with non-stick spray {or lining it with parchment paper}. 
  2. In a large bowl combine butter, sugar, eggs, lemon juice, salt and zest.  You can mix it by hand or use a hand mixer.  Add flour and mix until just combined. Pour into the prepared pan and spread into an even layer. 
  3. Bake for 18-22 minutes or until the edges are brown the middle is set.  Do not over bake, you want the texture to be like that of a brownie. 
  4. Let it cool.
  5. While the lemonies are cooling, combine the glazeingredients and whisk them together.  Pour it over the cooled bars and spread out into an even layer over the top. 
  6. Cut into squares and serve.  Store in the refrigerator in an airtight container for up to 4 days.

Cocktail Pairing: Lemon Basil Martini

Description: A zesty, herbaceous martini that highlights the citrus notes in the dessert while balancing the creaminess with fresh, light flavors.

  1. Muddle the basil leaves in a shaker with the simple syrup.
  2. Add vodka, lemon juice, and ice. Shake well.
  3. Strain into a martini glass and garnish with a lemon twist or a fresh basil leaf.

 

Mocktail Pairing: Lemon Cream Soda

Description: A creamy, citrusy soda that mirrors the flavors of the dessert while adding a fizzy, fun twist.

Ingredients:

  1. Combine lemon juice and vanilla syrup in a glass with ice.
  2. Add cream (if using) and top with sparkling water. Stirgently.
  3. Garnish with a lemon wheel or zest.
