This week on Eat It Up we have Chef Edward Forster from Buffalo’s hottest restaurant, Mike A’s at the Hotel Lafayette. Before coming back to Buffalo, Edward was honing his skills in some amazing kitchens in Chicago, London, Philadelphia and Atlantic City. His last two jobs included a stint as Sous-Chef at the Michelin starred Blackbird and graham elliot, two of Chicago’s best restaurants. We talked about his path from Golf course cook to the CIA to where he is today, why Joy Division is so great, what it’s like to start a restaurant from day 1 and the process of teaching 21 year old’s how to work in a kitchen.
