Today on the podcast we have Mike Shatzel, the owner of Blue Monk, Coles and co-owner of Liberty Hound. We’ve been big fans of Coles and Blue Monk for years now, Coles was my first ‘go to’ bar when I turned 21 and we’ve visited Blue Monk as much as any other restaurant over the last three years. We invited Mike down to the studio to talk about the start of his beer love, changing the beer and food at Coles over time, opening Blue Monk, Buffalo’s beer scene and opening the first proper restaurant on the waterfront.
