Sweet Potatoes...might not be "new" to you but perhaps this preparation is new.

You can slice them into slabs and use them as you would toast.  Think gluten-free avocado toast!  Simply cut into slabs and brush both sides with a healthy oil and bake, flipping once or twice.  Try with tomato sauce and fresh mozzarella for a high-fiber pizza alternative!
