Explaining Celiac Disease to a child - or an adult - can be challenging. Describing how one crumb of gluten can activate the auto immune response, causing villi in the small internist to blunt and malabsorption of nutrients can result can confuse and many.
Even as a Health Educator, I've found it challenging to explain the autoimmune disease component of Celiac, especially to kids. Another point that's hard to convey: even one crumb of gluten-containing food activates the response. Lastly, beyond the symptoms you may experience, what is happening internally.
