The University of Buffalo Campus Dining and Shops (CDS) has been recognized as having the “Best Food Allergy Training for Universities” in 2019 by AllerTrain by MenuTrinfo, a food allergy and gluten-free training and awareness for the food service industry.
Lori Bendersky, CDS’ registered dietitian, became an AllerTrain Master Trainer in March 2018. She then trained the entire UB culinary and management team through the AllerTrainU course, a food-allergy and gluten-free certification program that covers essential information on how to safely prepare food for guests with food allergies, intolerances, sensitivities and celiac disease in a university food service setting.
