What a wonderful conversation with a great chocolatier , we talk about how he learned his craft, him literally getting on a plane and going to France and Spain to work with great people .

Paul was diagnosed with dyslexia at 28 and while that certainly made conventional learning harder for him, it also means he thinks very differently , approaches projects in a unique way and 'finds a way' to bring projects to life .

He has recreated a designer dress in chocolate that was worn on a catwalk , has created new processes for making artisan chocolates and desserts, is skilled at flavour work and capturing flavours in chocolate and is a real craftsman. Everyone should get to eat some of Paul's chocolates in their lifetime.
