Today we've got Shira Blustein on the pod. She's the owner of the Acorn, an award winning restaurant where plants are celebrated. Shira has also just released a cookbook that is visually stunning, and is jam packed with amazing meals that are accessible to make in your own kitchen. The Book is named after her cozy Vancouver Restaurant, and like all things Acorn is a collaboration between Shira and chef Brian Luptak. "Acorn, Vegetables Re-Imagined" is a great resource to get more plants in your diet and is also a seasonal guide to eating and harvesting local ingredients all through the year!

Our conversation covers more than just the Acorn, and Shira's new book, we hear about her Punk Rock origins, and how the values of Punk led her to adopt a plant-based lifestyle. We jam on being a restaurant entrepreneur during a pandemic, how to pivot and rely on your team, and how Acorn always tries to embody those punk rock values of pushing the envelope, celebrating diversity and creativity while staying true through it all.
