The interview: Despina Marselou is a dietitian and nutritionist who specialises in clinical nutrition and immunology. She cured her own chronic illness with a whole food plant-based diet and now spends her life helping others do the same. She talks about the importance of gut health, shares tips for switching slowly and discusses how a plant-based diet can help autoimmune disease, long Covid, IBS and many other chronic illnesses.
