Welcome!

Today we’ll explore how food, biochemistry, and gut health connect with your energy, mood, and hormones — and why you sometimes feel heavy, tired, or out of balance.

I’m Elsa Annikki Knudsen, pharmacist and coach. With a passion for combining science with inner wisdom, I’ve come to understand that the body speaks a language of energy and balance, especially through the gut.

Many struggle with digestive issues for years, trying diets, supplements, or medications — but rarely reaching the root cause. As a pharmacist, I know medicine is valuable, but I also know its limits. So many people take expensive treatments for their gut, without anyone asking: why is the body reacting this way?

Let’s start here: What is inflammation, and why should you care?

Your stomach is a chemical environment. When we combine acidic + fat, sugar + fat, or too many pH levels in one meal, it disrupts digestion. Think of coconut milk and berry jam — it clumps! Something similar happens in your gut. Poor combinations lead to fermentation, gas, discomfort, and over time: inflammation.

Digestive trouble impacts more than your stomach. Fatigue, brain fog, skin issues, weight gain, and restlessness all tie back to the gut.

And there’s more: inflammation and hormones.

Many women notice belly fat and bloating during menopause — not just “age,” but hormonal imbalance. Chronic stress raises inflammation, disrupts cortisol, insulin, estrogen, and appetite.

You might experience:

•Poor sleep

•Irritability or sadness

•Sugar cravings

•Feeling like “someone else”

It’s all connected: gut, hormones, nerves. A biochemical dance.

So, what can you do?

1.Eat simply.

Whole foods, fewer combinations. Example: rice and vegetables, or blueberries on their own.

2.Eat mindfully.

Slow down. Chew well. Create calm around meals.

3.Think anti-inflammatory.

Turmeric, green tea, omega-3, steamed vegetables, blueberries, leafy greens.

And remember: it’s not just what you eat, but how you eat and combine it.

Sugar and fat together fuel inflammation. Ultra-processed foods, refined oils, and too many ingredients overwhelm digestion. Even healthy choices can clash if mixed poorly.

We eat too much, too often, too fast. The body doesn’t get to digest — it goes into defense mode.

Medication can ease symptoms, but food choices can heal.

Neutral foods — like rice, steamed vegetables, lentils, blueberries, and green tea — offer calm for your gut. Fewer ingredients per meal give digestion a “spa day.”

My hope is that you start asking: What is the root cause?

There’s no one solution, but there is a principle: when you understand food’s deeper impact — both chemical and intuitive — you build health from within.

And finally: Reduce stress.

Calm your nervous system with meditation, breathwork, nature, and rest.

Your body is speaking to you. Maybe it’s time to listen closer. Healing isn’t about perfection — it’s about small choices, a little less sugar, and a little more calm. Start with one meal. One choice.
