Erica's story, I hate to admit, is fairly typical in the US, with the Standard American Diet. She was suffering from diabetes, migraines, high blood pressure and a multitude of other illnesses causing her to take 14 different doctor prescribed medications. She was depressed, facing memory loss and was told she would be living the rest of her life on at least 14 different medications.
I am happy to say that Erica Stephens has been medication free for over 2 years simply by changing to a plant based lifestyle. Luckily, her daughter was Vegan and helped her regain her memory and her health by eating a plant based diet. She is still on the path to recovering her health and is dedicated to helping others do the same. She has created a Facebook group, Website and Cookbook to help new Vegans learn to cook and eat healthy.
Erica Stephens and her daughter have their first cookbook out now and they are working to release a second cookbook by the end of the year (2020). They are planning to open a catering business / Food Truck soon. Erica offers online classes for those who are becoming Vegan or those who are simply interested in learning more about eating and living a healthier lifestyle.
