When you grow up with Chinese immigrant parents who were extremely poor, eating meat is seen as a luxury. I still distinctly remember the moment when I went to a Chinese restaurant with my parents, bit into what I thought was red tofu, only to ask my mother who then said, "That's pig's blood." I could not have spit it out of my mouth faster — and I'd been eating it for years. Or, how my cousin used to get praised for eating every piece of the watermelon until he was biting into the white of the rind?

What happens when you grow up and see that the bone marrow you used to eat out of necessity to get the most out of every piece of bone becomes a delicacy on American menus? Or, how you were teased for eating seaweed, only to have your white friends now feed it to their children as regular snacks?
