Super simple, no baking required, Oatmeal Raisin Chocolate Chip Bites. Full recipe:
- 1/2 cup peanut butter
- 3 tbsp honey
- 1 tsp vanilla
- 3/4 cup rolled oats
- 1/4 cup shredded coconut
- 1/4 cup flax seed ground
- 2 tbsp raisins
- 2 tbsp chocolate chips
- Combine the nut butter, honey, and vanilla in a bowl and mix to combine.
- Next, add in the rolled oats, shredded coconut, and flax seed and mix to combine.
- Finally, add the raisins and mini chocolate chips and gently stir to combine, just enough to evenly distribute them throughout the mix.
- Using an ice cream scoop, portion out 12 evenly sized balls and place them in a dish. Enjoy right away, and refrigerate any leftovers that aren't stolen while you're not looking!
