Creamy Garlic Pasta w/ Chicken & Spinach
Ingredients:
10 ounces dry pasta
I lb chicken breast
1 teaspoon garlic powder
1 teaspoon herbs de Provence
1 teaspoon paprika
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic
1 can diced tomatoes
2 cups fresh spinach chopped
2 cups soy milk or cream
1/2 cups parmesan cheese
1/2 cup goat cheese
Directions: Season chicken breast, brown in pan coated in olive oil. Sauté garlic in butter, then add chopped diced tomatoes and spinach. Simmer for a few minutes. Add soy milk or cream to diced tomatoes and spinach, simmer for a few minutes more, add salt and pepper to taste. Boil water, cook pasta. Add cooked pasta to sauce. Add goat cheese and Parmesan. Stir until all pasta is coated. Enjoy!
Cottage Cheese Cookie Dough
8 oz cottage cheese
⅔ cup almond flour
1 scoop vanilla protein powder
1 teaspoon vanilla extract
2 tablespoon maple syrup
½ cup chocolate chunks
Instructions:
Blend the cottage cheese with the vanilla extract, and the maple syrup. Add the protein powder, almond flour, and salt to a bowl then top it with the cottage cheese mixture. Stir until combined then fold in the chocolate chips. Yum!
